Mexican Salad
Ingredients:
1 cup Boiled Red Rajma ( Kidney Beans)
1 cup Sweet Corn Kernels
1/2 cup Tomatoes (Remove the Pulp & chop finely)
1/2 cup Processed cheese or Paneer
1/2 cup Spring Onions
1 tbsp Coriander , chopped
Salt to taste
Nachos to top
For Dresssing:
2 tbsp Olive Oil
1 tbsp Lemon juice
1/2 tsp Salt
1/4 tsp Oregano
1/2 tsp Sugar
2 tsp Chilli Sauce
Pinch of Black Pepper
Method:
Mix together all the ingredients of the dressing and whisk well. Keep aside.
Mix Rajma, corns, tomatoes, cheese, coriander leaves, spring onion and salt.
Pour dressing mix well and chill it.
Before serving the salad top with some spring onion greens, coriander and nachos.
Serve cold or at room temperature.
