Fruity Quinoa with Hariyali Kabab mixed vegetables Delight
Ingredients;
For Betroot Chips:
- 1 Beetroot
- Salt to sprinkle
For Fruity Quinoa
- 1 Cup Quinoa
- 2 Cups Orange Juice
For Hariyali Kababs
- 2 Potatoes , boiled and mashed
- 2 cups Broccoli , finely chopped
- 1 cup Spinach Leaves (Palak)
- 1/4 cup Mint Leaves (Pudina) , chopped
- 1/2 Cup Coriander (Dhania) Leaves , chopped
- 1/2 tsp Garam Masala Powder
- 1 inch Ginger
- 1/2 tsp Black pepper powder
- 2 tbsp Lemon juice
- 20 Cashew nuts
- 2 tbsp Gram Flour
- 2 Green Chillies
- Salt to taste
For Grilled Fruit salad
- 4 Strawberries
- 1 Kiwi
- 2 rings Pineapple
- Salt and Pepper to taste
- Lemon juice to sprinkle
For Salad
- 1/2 Red Bell Pepper
- 1/2 Yellow Bell Pepper
- 1/2 Green Bell Pepper
- 1 tbsp Olives
- 1 Red Onion
- 1 small Cucumber
- 2 tbsp Feta Cheese
- 2 tbsp Vingrete Dressing
- Few Baby Spinach Leaves
Instructions:
For Beet Root Chips
- Slice the beets paper thin (1/16-inch).
- Place the beet slices in a large bowl and sprinkle salt over the top. Toss well. Now let the beets sit in the salt until they release their natural juices, about 15-20 minutes. This is what allows them to retain a better shape and color.
- Toss the beets again, then drain off the liquid.
- Lay the slices out in a single layer on the prepared baking sheets. Bake for 10-15 minutes until crisp, but not brown.
For Hariyali Kababs
- Boil and mash 2 potatoes and keep aside. Steam the broccoli for 5 minutes.
- In a food processor add broccoli, raw cleaned spinach, mint, coriander, freshly ground garam masala,ginger, green chillies and cashew nuts blend it all into a smooth paste.
- Add potatoes, Gram flour, Salt, Pepper and Lemon Juice. Mix Well
- Shape them in desired Shape.
- Grill on Frying Pan Sheet till golden Brown from both sides.
For Fruity Quinoa
- Wash and soak Quinoa for 30 minutes.
- Drain add orange juice and cook for 10 minutes.
- Let it sit for few minutes.
For Grilled Fruit salad
- Sprinkle little salt, pepper and lemon juice and keep aside for few minutes.
- Grill till soft but not mushy.
For Salad
- Cut all the ingredients into the desire shape.
- Add Olives and drizzle Dressing when ready to eat.
- Garnish with feta cheese.
When all the elements are ready serve in a platter and enjoy!
