Thai Noodle Salad with Peanut Dressing
Ingredients:
- 125 grams Noodles
- 1 Red Bell Pepper, Cut into matchstick size
- 1 Red Bell Pepper, Cut into matchstick size
- 3 large Lettuce Leaves
- 1/4 Cup Salted Peanuts
- Fresh Coriander Leaves
- Black Pepper for seasoning
For Dressing :
- 3 tbsp Creamy Peanut Butter
- 1/2 tbsp Olive Oil / Sesame Oil
- 1/2 tbsp fresh Ginger
- 4 tbsp Water
- 2 tbsp Vinegar
- 2 tbsp Light Soy Sauce
- 2 tsp Red Chilli Flakes
- 1/4 tsp Red Chilli Flakes
- 1 tsp Sugar
Instructions:
- Combine all the ingredients of the dressing in a small bowl and whisk to blent. Set dressing aside.
- Cook noodles in a large pot of boiling salted water until just tender but still firm to bite.
- Drain noodles rinse with cold water and drain again.
- Transfer noodles to a bowl.
- Add all the vegetables.
- Pour dressing and toss to coat.
- Season with black pepper.
- Transfer to a serving bowl. Sprinkle with fresh coriander leaves and peanuts.
