Cook tomatoes in hot boiling water for 30 seconds.
Transfer them in cold water.
Remove the Skin and seed. Chop finely.
Bring enough water to boil add 1 tsp salt and 1 tsp oil .
Add 1 cup Penne pasta and cook.
On a medium to high flame, cook till the pasta is done. you can choose to cook the pasta till al dente or can cook it completely.
In a colander, drain the pasta and keep aside.
In a pan take 1 tbsp Olive Oil.
1 tbsp chopped Garlic. Saute for a minute.
Add Red Chilli Flakes, Chopped tomatoes, Mixed Herbs and salt to taste.
Add boiled pasta. Mix Gently. Turn off the flame.
Serve immediately topped with a generous portion of grated parmesan cheese and fresh chopped parsley.
