Green Jali Samosa
Ingredients:
For Dough:
2 cups Maida (All-purpose flour)
2 tbsp Oil
1 cup Spinach (Palak) Puree
Salt to taste
For Filling:
2 medium Potatoes
2 tbsp Paneer, finely chopped
1 tbsp Oil
1/2 tsp Jeera ( Cumin )
1/4 tsp Hing ( Asafoetida )
1/2 tsp Red Chilli Powder
1/2 cup Peas
1 tsp Green chilli, chopped
1 tbsp Green Coriander, chopped
1/2 tsp Coriander Powder
1/2 tsp Anardana Powder
Salt to taste
Method:
Dough:
Wash Palak and boil for some times and make a puree.
Now In bowl ,add all-purpose flour,salt and mix well.
Add oil and mix until crumbled.
Gradually add Palak Puree and knead until hard dough is formed,cover with a wet cloth and let it rest for 15 minutes.
Filling:
In frying pan,add Oil,Cumin, Hing and mix.
Add Potatoes, Salt, Red Chili Powder and mix well.
Cook till the potatoes are soft.
Now add Peas into it and cook for another few minutes.
Add green chillies, green coriander leaves, Coriander Powder and Anardana Powder. Mix Well.Switch of the gas.
Now add chopped paneer into this and few fresh pomegranate seeds into this.
Adjust the seasoning and let it cool.
Knead dough again.
Making samosa:
Take a small dough,make a ball and flatten the dough.
Sprinkle all-purpose flour and roll out with the help of rolling pin.
Now cut the poori in two equal halves.
With the help of the knife,add cuts lengthwise on one side of the poori .
Apply water on 2nd half poori and keep the jali poori on that. Press slightly.
On one side of dough,apply water,join two sides/edges to make a cone and press gently to seal the cone.
Fill the cone with prepared stuffing,apply water on the edges and bring the edges together and seal the edges properly.
Prepare the remaining samosas similarly.
In wok,heat cooking oil and fry on very low flame until golden brown.
