Cut the potatoes in the fingers. Soak potatoes in cold water adding a tsp of salt and few drops of lemon juice for 1/2 hour, then wipe them with the towel & sprinkle 3 tbsp of cornflour and mix well to coat them. ( You can skip this step if you are taking frozen fries )
Put the sliced potatoes in a large bowl and sprinkle cornflour, All purpose flour,rice flour, red chilli sauce and sprinkle water if needed to coat and then Deep fry the potatoes to golden color.
Keep aside. Before adding the potatoes to the sauce refry them in hot oil to make them crisp.
Heat oil in pan add Onion, red chilli and stir fry. Add all the sauces mixed together and fry for 1/2 min.
Then toss the fried potatoes until combine with the sauces. Sprinkle some roasted sesame seeds and garnish with spring onion greens.
