Cut Paneer into 4 pieces. Pat dry Paneer Square well to make sure no water is there.
With the help of knife scoop out the centre to form a square shaped hollow, leaving the border of 1/4-1/2" all around.
Do not dig very Deep.
Beat the butter and mixed herbs well and apply this butter on the paneer all around and also in the hollow. keep aside for 30 minutes.
To Prepare the filling: Heat butter in a pan, add the onions and saute till soft. Add the crushed garlic, broccoli/cauliflower crumbs and stir for 1 minute.
Add the capsicums, salt, pepper and chilli flakes. Remove from fire. Add cheese. keep aside.
Pan fry the buttered paneer on a non stick pan or grill pan till light golden all around.
Put the filling in the paneer.
For accompaniments: Micro all the veggies Covered for three minutes with 1/4 cup water. Heat butter in a pan Put all the vegetables and saute for 1-2 minutes. Sprinkle lemon juice, sugar, salt and pepper.
To Make Sauce: Mix all the ingredients given under to be mixed together . Heat butter and add rosemary. Stir for 30 seconds. Add the mixed ingredients and stir till it boils. Cook for 2 minutes.
Remove from fire and add lemon juice.
Now pour this Sauce over the paneer. Serve hot with Rice and Veg Accompaniments.
