Pound Cake with Chocolate Glaze
Ingredients:
- 250 gm Butter
- 225 gm Sugar
- 125 gm Flour
- 125 gm Corn flour
- 1/4 tsp Salt
- 4 Eggs
- 1 tsp Baking powder
- 2 tsp Vanilla essence
For glaze:
- 150 gm Dark chocolate
- 1 tbsp Cooking oil
Method:
- Beat butter and sugar using a hand mixer until soft.
- Add vanilla essence, salt stirring all the time until you obtain a smooth and even mixture.
- Add eggs one at a time and beat well after each addition.
- Sieve the dry ingredients flour, corn flour and baking powder twice.
- Mix the flour mixture in butter mixture and whisk till smooth batter.
- Preheat the oven at 180 degrees.
- Transfer the sponge mixture in loaf cake tin and bake for 20 minutes. Then make a length wise cut about 1 cm in the middle of the cake with a sharp knife. Put the cake back in the oven and reduce the oven temperature to 160 degree and bake for a further 45 minutes or till done.
- Remove the cake from the oven leave in tin for 10 minutes. Then take it out and leave to cool completely on rack.
- For the glaze melt chocolate with oil, stirring all the time. Coat the cooled cake with the glaze.
